Rooting out the dandelions

We prefer to dig dandelions rather than poison them, and we like to do our weeding after a good soaking rain has penetrated the soil.  Here my wife shows the impressive (~10") taproot of a dandelion extracted from one of the garden beds.

  1. Spring dandelion leaves are a delicious salad green.

    Organic, self-propagated and filled with health-fortifying phytochemicals and chlorophyll, dandelions are one of the many culinary treasures relegated to the "weed" category, along with lamb's quarters, sorrel, chickweed and stinging nettle (steamed). The best thing people could do would be to rip up their lawn and let the "weeds" take over. Then enjoy, enjoy, enjoy!
