At the risk of getting inappropriately technical on what is undoubtedly an "art" project... IF I wanted to do this for real, would I need to use alcohol or formalin? I'm just guessing that water would cause some problems.

The likely suspect would be alcohol. Formulin would chance dye staining and water would just encourage algae and other unwanted growth.
