Making alpine cheese in Switzerland



There's something about LARGE photos that make any story on the internet more interesting, even if the pictures aren't necessarily beautiful or unusual. Today I ran across a photoessay about the making of cheese at an isolated hut high in the Swiss alps.

The two photos above show the washing of the cheese forms (in the cows' water trough), and the separation of the hot whey from the curds. You can also learn how to use a "guitar" (tranche-caille) to cut the curds. And view a lifestyle which is both interesting and reminiscent of a dream from the 1960s.
