They're pretty tasty, very fibrous, and high in all sorts of things good for you. What amazes me about this amaranth that they grow (similar image: http://freerangezucchini.com/wp-content/uploads/2012/06/amaranth2.jpeg) is that although the plant is mostly green with a bit of red in the veins, when you cook it, the plant juices stain the entire dish (be it stir-fry or soup) a bright bold magenta. As we have learned you have to use plenty of chemical to kill them.
